Front of house is the part your guests see. Dining room framing and finishes, bar build with under-bar plumbing and drainage, host stand and banquette millwork, restroom construction to ADA standards, and lighting and acoustic treatment so the room does not sound like a warehouse.
Taking over a former restaurant looks cheaper. Sometimes it is.
But the previous tenant’s hood may not be sized for your menu. The grease interceptor may be undersized for your seat count. The electrical service may not support your equipment list. And that equipment may not have been maintained since it went in.
